2021 Domaine Ichi Pinot Noir, Hokkaido, Japan Denizot 2015 Isole e Olena Cepparello1 btl max per customer 100% Pinot Noir from Ichiro Ueda's vines in Niki, Yoichi, on the northern coast of Hokkaido. The vines are farmed organically and planted on clay and sand over old volcanic Andesite. The grapes are harvested by hand, partially destemmed, and fermented in neutral plastic fermenters, then aged in used barrels. Bottled without fining or filtering and with only a small addition of SO2.
