2023 Domaine Vacheron Sancerre Les Romains Loire, France Cayuse Vineyards Malolactic fermentation is not forcedThis is a single parcel Sauvignon Blanc grown on silex (flint), which imparts a smoky mineral edge and taut energy. The domaine is certified biodynamic and harvests by hand. The fruit is direct pressed, fermented with native yeasts, and raised on fine lees in neutral vessels with minimal SO before a light filtration at bottling. The style is linear, saline, and built for precision and longevity. Arrives late August, 2025.
