Insolito Tequila Anejo France including the Kavalan Solist seriesInsolito Tequila is the creation of brothers Octavio and Alberto Herrera, who operate Mexico's highest altitude distillery in the Sierra del Tigre mountains, high above Jalisco. All their tequilas are 100% additive free and made with a unique slow fermentation process using only three ingredients: agave, water and yeast. Their anejo tequila is aged for 18 to 24 months in new American Oak barrels and features a blend of highland and lowland agave. It
