The grapes come from vines that are over 40 years old. The grapes are harvested by hand and sorted on arrival at the vat room. The grapes are then 100% de stemmed before being put into vats. After a pre fermentation cold maceration of 4 to 5 days, reheating the vat activates the work of the indigenous yeasts for gentle alcoholic fermentation.
