The fruit was lightly pressed and racked to barrel where fermentation happened spontaneously in French oak of varying ages

2020 Halara Terre Siciliane Bianco, Sicily, Italy Prieler and Occidental Vineyards (Sonoma CountyCatarratto, alberello (bush vines) planted 1987, 80m, facing north. Soft and slow pressing, purposeful oxidation of the must to protect it from future oxidation. Fermented in stainless. Aged mostly in stainless and a small part in acacia. Bottle aged for over 2 years before release.
