The bittering was mainly done by adding an infusion of our own home-grown cardoons and wormwood (grown at our winery)
and 20% Mourvedre co-fermented in qvevri (big terracotta amphorae) and macro bin
then a secondary fermentation is triggered by adding the ‘recioto’ in spring

Whole cluster pressed, fermented in neutral French oak, native yeast fermentations. Aged in neutral French barriques for 3 months before bottling.
