Description
• Fermentation with indigenous yeasts lasts 20 days
and one erroneously tends to say not the most complex one either
Winery: Grapes harvested manually into small crates
Farming: Organic (certified)
2022 Domaine de l'Enclos A L'Ouest' Chablis, Burgundy, France Ferrando • Fermentation with indigenous yeastsno added sulfur Chablis, from the commune of Beine, on full south facing slopes. It's a delcious, pomacious wine. We do recommend letting this decant or giving the wine time when you first open it: whether its intentional (or not) to protect the wine (as it sees no SO2), there is a touch of trapped CO2 in the final bottling. It settles quickly after opening and revelease a deliciously natural chablis.
