Hand-cut and sliced fruit and all the herbs are macerated in stainless steel with spirits for around three weeks

The wines were blended and settled in tank before being transferred to oak vats for malolactic fermentation

all while adapting and adjusting to a changing world

The vines were planted in 1957, 1970, 1990, and 1995. Soils Clay limestone Harvest & Vinification Elevage for one year in 228L and 400L oak barrels (10 15% new), then two months in tank.
