It fermented with full clusters and indigenous yeasts in an open top that was closed for seven days, and when it was full of carbonic gas, the clusters were foot trodden day for four or five days, after which it was pressed and finished fermenting without skins. It matured in a 60 liter concrete egg. The grapes for the red and
