Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. 100% malolactic fermentation, unfined and unfiltered. Time on yeast 66 months; Dosage 2. 2 g L;
