The fruit is shipped in crates to the distillery at the peak of ripeness. Each crate of approximately 1,000 lbs is hand sorted and separated from the pits for fermentation. Some of the pits are left in the fermentation tanks to add depth and body to the brandy. Our unaged spirits are rested in
